Knuckle Sandwich, Easter Sunday, and Tuna Specials

Hey Y'all,

The Catch landed in the big city last week and boy was Brookhaven ready for us! Crowds came to celebrate our opening and we met many, many nice people. I've never felt more encouraged about the path this little fishmonger has taken. People were actually thanking us for coming! What a great week and an encouraging start!

Speaking of spreading the word, did you see this nice article in the AJC? I had a nice long conversation with this lovely food editor and she made me sound so smart! Thank you Ligaya Figueras for your great piece on my little business.

Closed Easter Sunday
We are closed Easter Sunday, April 4th, a week from today. Keep that in mind when shopping next week and planning your Easter meals. If you need any special orders for your holiday gathering, go ahead and call your local market to place those so you're guaranteed availability. We don't want any sad bunnies next weekend!

You Want a Knuckle Sandwich?
No! Not that kind of knuckle sandwich. We have a brand new crab salad sandwich that you're going to love! We know everyone is looking forward to our lobster rolls coming back in season so while we're waiting, Chef Jon came up with this delicious new creation. It's fresh crab claw meat (pulled from the knuckle) mixed with mayo, Dijon mustard, celery, red bell pepper, and our special blend of seasonings. Come in today and get you a knuckle sandwich for just $13.99! You deserve it ;)

And Finally
I'm thinking about my mom this morning. I started my little business in Johns Creek in 2011 with money I inherited from her when she passed away. It wasn't much money - what she had left at the end of her life was split among her five children. But it was enough to get a teeny store and some used refrigeration equipment. My buddy, David Metz, from the new wine shop next door and I used to sit outside and watch hoards of traffic pass along Medlock Bridge without giving us a second look. We would make bets on whether the lone car pulling in would be fish or or wine.

We've come a ways since then. David is on to a big career in wine and I am sitting here in my third location sipping coffee and listening to my amazing staff selling my fish. I can hardly believe I am here.

I hope my mom is proud.

Blessings,
Kathleen

Crawfish, Flounder Specials & Prosciutto Wrapped Cod

Hey Y'all,

Crawfish season is now. And before you ask, let me say that we do not sell live crawfish. Why? If you order a sack of live crawfish, you are planning an event with a sizeable number of people. Transporting live crawfish from the bayous to Atlanta involves refrigerated trucks that carry lots of fish and the temperature to keep that fish fresh is not the temperature that sustains the life of those little mudbugs. So they die. And what are you going to serve in its place at your crawfish boil? And who are you going to be mad at for ruining your event? This no live crawfish sales decision is pure self-preservation on my part.

Fin Mail (aka tooting my fishy horn):
Joe R. sent this delightfully worded email: Hi Kathleen, Thank you for screwing up and cutting me way more salmon than I requested last weekend. It afforded me extra salmon burgers for lunch the next day. Thank you for not getting offended when I told you I was going to cook my fish outside on the grill so I didn't pollute my house with fish smell. Your fish doesn't smell...my cooking does (plus the grill is a lot healthier and easier to clean). Thank you for agreeing with me that Cod does in fact have a strong smell and turning it into a fishmongering moment by explaining to me why. It was great seeing you in the JC store last weekend. Stay safe.

Thank YOU, Joe, for taking the time to send me this note! Let me explain to the rest of the readers that I did accidentally overcut his order and I was going to re-cut it but he insisted on taking it all. And the reason some fish stinks more when it is cooked is that the fat content is high. Fish from cold water generally have more fat and that can be a bit stinky when it cooks. Most of our fish is so fresh that you wouldn't have an issue with smell anyway. Here are the salmon burgers he cooked up!
Specials This Week:
Flounder fillet for $17.99/lb
Whole flounder (1/2 lb. each) for $8.20/lb

Catch-To-Go This Week
Available until Sunday, we have our Shrimp and Blue Crab Pasta.
Starting Monday, we'll have Prosciutto Wrapped Cod with Mediterranean Vegetable medley.
And Finally
If you look carefully at the sky today and you see one of the clouds marked "9" look above it and you will see me. What am I doing up here? I'm enjoying the sunshine and loving the idea of putting the down jacket away for the next two seasons.

Hope you have a great weekend planned with lots of outdoor activities. And remember, your mask will keep the pollen out of your nose. Add that to the list of mask-wearing advantages!
Blessings,
Kathleen
