College Football, Labor Day, and Fall Recipes

Happy Friday from the Catch Crew!
College Football is Here!
College football kicks off this weekend! Break away from the normal wings and chips and serve some crispy bacon wrapped shrimp with our house-made cocktail sauce. You can also grab some of our crab cakes (don't forget the mustard sauce), smoked trout dip, or smoked salmon spread that would be great for any tailgate - or just watching the games from your couch.

Labor Day Weekend
Labor Day weekend is next weekend! Are you planning on soaking up the last bit of summer with some grillin' and chillin' by the lake or pool? If you are, let us help with the food. If you're planning for a big feast, make sure you get your orders in early since we close at 3PM on Labor Day. We can do party trays filled with all the goodies that are sure to help end summer with a bang.

Fall on the Horizon
While some of us are sad to see summer end, others are ready for cooler weather and more fall comfort food. It may not really start cooling down in Georgia until almost October, but here are a few recipes that will have you feeling like it's a crisp, fall evening. Pair them with a glass of Alexander Valley Cabernet (available at our Brookhaven Market) or a glass of any pinot variety from our friends at both Milton and Johns Creek Wine & Crystal:

Coho Season, Wine Tasting, and Mercato Update

 

Hey Y'all,

Alaskan Coho Salmon Season
Alaskan Coho salmon season is here! Now through mid-October, this tasty salmon will be gracing our seafood cases. Coho is known to be approachable, meaning you can happily sit down to dinner with it. It's mild flavor and delicate texture distinguish this affordable, late-season species. Not the rich buttery flavor of king salmon or the strong salmony flavor of sockeye, coho has a nice, mild, loved-by-everyone taste.

These large fish, sometimes called Silvers, are the last to return to their home rivers and have become a fall favorite that pairs well when baked with seasonal root vegetables and mushrooms. It may not be fall weather outside yet here in Georgia, but we sure do like those fall flavors!
Mercato Ending
We will be ending our partnership with Mercato delivery service next month. I hope you are not too disappointed but please know that we can still do curb-side pick-up and you can always call ahead to reserve your order!

And Finally
I have been reading a book called Undaunted Courage about Meriweather Lewis and his journey with his buddy, Clark, across the country. It really is a spellbinding story about the trials they endured as they made their way along the Missouri in search of an "all-water route across the continent." As you probaby know, they suffered through extreme temperatures, communication issues with the natives, lack of food, and lack of clothes and shoes. They climbed huge mountains and rafted raging currents on the Missouri River. At one point, Lewis gets his first view of the Rockies and leaps for joy and then immediately starts to think of how difficult it will be to cross them in pursuit of the Pacific Ocean.

Here's what he wrote in his journal (with his spelling!)

"when I reflected on the difficulties which this snowey barrier would most probably throw in my way to the Pacific, and the sufferings and hardships of myself and party in them, it in some measure counterballanced the joy I had felt in the first moments in which I gazed on them."

But here's the best part:

"As I have always held it a crime to anticipate evils I will believe it a good comfortable road untill I am conpelled to beleive differently."

Could you ever find a better outlook on life than that? Believe it well be a good comfortable road until you are forced to think otherwise -- a message worth repeating to yourself every time you start to dread the future.

Back to School, Grey Sole, and Catch to Go

 

Hey Y'all,

Back to school used to mean leaving behind outdoor cooking and starting to plan Fall meals. These days, back to school is right smack in the middle of summer! And that's a good thing because there are still so many great fish coming your way for fast, healthy and easy week night meals.

This week we have grey sole for our special which is a great kid-friendly fish. It's mild and thin enough to stuff. Have you tried picking up one of our crab cakes to roll up inside the sole fillets? Stuffed sole to warm your soul. Roll into pin wheels or place one fillet on top of another with the crab meat in between. It's heavenly. Heavenly soul.

Here's another idea to switch up your fish dinners. Pick up a container of our mustard sauce. Yep, I said mustard sauce. If you don't use all the crab cakes to stuff your sole, you can stuff your mouth with them slathered in mustard sauce. Salmon and mustard sauce? YES!! Any kind of fish with mustard sauce, YES!!! One day I had some sauce that was going out of date that day and I gave it to a customer and asked her to give it a try. She's been back weekly for it because she discovered it goes on chicken and pork as well. Trust me. It's delicious.

Speaking of Catch to Go, we are trying to ramp up the portions on our Catch to Go. If you bought some recently and felt that they were a bit meager than usual, don't worry. We heard you and we fixed that. It's a pan full of goodness.

And Finally
Can I bore you a minute? It's that time of year again when I stop bragging on my fish and remind you about the remarkable blessings in my life.

Back in 2013 I had been open for two years at Johns Creek and one day I had a little company for my walk home from work. Here's Dakota, Reilly and Joel from way back then.
That was yesterday. Today, they are getting haircuts and new clothes and school supplies to start 11th, 5th and 3rd grades. Where has time gone?
But wait! There are two more!! Kailey is starting 11th grade and Keira is starting to walk.
They mean the world to me.
