Rainy Day Stew, Striped Bass, and Prosciutto Wrapped CTG

 

Happy Friday from the Catch Crew!
Rain, Rain, Go Away
The rain may be putting a bit of a damper on the weekend, but why not make the best of it and make some Sicilian Fisherman Stew? This is such a great recipe to combine some of your favorite fish fillets such as snapper, cod, sea bass, and halibut. It's super simple to make and can be ready in about 30 minutes.
Species Spotlight: Striped Bass (or Rockfish)
Striped bass, more commonly called ‘rockfish’ or ‘stripers,’ are perhaps the most iconic fish in the Chesapeake Bay region. Distinguished by the dark horizontal stripes on their silver bodies, rockfish can live up to 30 years and reach over five feet in length. They migrate up and down the East Coast, but most are born in the Chesapeake Bay. In terms of quality, they are second to none. It has a moderately fat, firm-textured flesh with a mild, sweet flavor. The flesh cooks up white and moist. The great looking dark striped skin crisps up beautifully when cooked and tastes great. Since we are so excited about this fish, it's the special this week!

Labor Day Weeked, Tuna Special, and BOGO Fish

 

Hey Y'all,

I thought I would give you a look at the life of a fishmonger during hurricane season. Here's the current state of affairs from our supplier:

Gulf of Mexico
  • West coast Florida boats are now able to get back out after Hurricane Ida but many have been at the dock for a week, so expect spot shortages of Grouper. Virtually all of it comes from the eastern Gulf.
  • Much of the USA Red Snapper fishery is based in Louisiana. Those boats that were able to shelter or move before the storm still have to work through the difficulty of dock facilities destroyed, damaged or without power (and ice!). Other areas of the Gulf will produce some but supplies will be tight for a while.

North Atlantic
  • Northeastern species will be scarce through next week (at least) due to coastal flooding and difficult fishing conditions.

Caribbean and Southern Gulf of Mexico;
  • 5 to 10 foot seas in the Southern Caribbean are keeping many boats in. A tropical system there is showing signs of strengthening and will most likely move across the Yucatan into the southern Gulf. This will cause shortages of various Snappers and other Sub-Tropical species.

Summary;
  • Fishermen (and women) are independent and resilient people. They tend to stay late and get back to work early after weather events, so we are optimistic about the weeks ahead, barring more major weather events.
  • We will add to our overall supplies of fish by replacing short items with increased volumes of varieties out of other regions of the continent and beyond.

Whew. Please be patient if we don't have your favorite fish in stock. We will do all we can to get what's available.
Labor Day Weekend

Mercato Ending
Just a reminder that we are ending our partnership this month on 09/13. Since most of you have asked, we would love to use other delivery services however other services only allow a fixed menu. Our menu changes every day because we provide the freshest fish available so this is not an option for us. We still have curbside available if you feel more comfortable than coming inside and you can always call ahead to place your pickup order.

BOGO Discount Fish
We're doing a little late summer cleaning (is this a thing?) and we need our freezers cleaned out. If you are unaware of our discount fish program, here's the FRO-1-1 (get it? FRO-1-1 instead of 4-1-1?). While our goal is to sell out of our fresh fish each day, sometimes it's just not possible. When this happens, we vacuum seal in the freshness and mark it down 10%! It's our No Fish Left Behind program.

Beginning Tuesday, Sept. 7th, our discount fish is buy one get one free (of equal or lesser value) while supplies last! This deal is only good from Tuesday 09/07 until Friday 09/10 and only applies to our discount fish. Stocking up your freezer will not only save you money, but time during the week!

My husband, my father, my daughter, my nephew, my great-nephew and my sister-in-law all have September birthdays. So if you are spending lots of time texting Happy Birthday messages, you are not alone! Happy birthday from the Catch to all those September babies!

College Football, Labor Day, and Fall Recipes

Happy Friday from the Catch Crew!
College Football is Here!
College football kicks off this weekend! Break away from the normal wings and chips and serve some crispy bacon wrapped shrimp with our house-made cocktail sauce. You can also grab some of our crab cakes (don't forget the mustard sauce), smoked trout dip, or smoked salmon spread that would be great for any tailgate - or just watching the games from your couch.

Labor Day Weekend
Labor Day weekend is next weekend! Are you planning on soaking up the last bit of summer with some grillin' and chillin' by the lake or pool? If you are, let us help with the food. If you're planning for a big feast, make sure you get your orders in early since we close at 3PM on Labor Day. We can do party trays filled with all the goodies that are sure to help end summer with a bang.

Fall on the Horizon
While some of us are sad to see summer end, others are ready for cooler weather and more fall comfort food. It may not really start cooling down in Georgia until almost October, but here are a few recipes that will have you feeling like it's a crisp, fall evening. Coho Season, Wine Tasting, and Mercato Update

Alaskan Coho Salmon Season
Alaskan Coho salmon season is here! Now through mid-October, this tasty salmon will be gracing our seafood cases. Coho is known to be approachable, meaning you can happily sit down to dinner with it. It's mild flavor and delicate texture distinguish this affordable, late-season species. Not the rich buttery flavor of king salmon or the strong salmony flavor of sockeye, coho has a nice, mild, loved-by-everyone taste.

These large fish, sometimes called Silvers, are the last to return to their home rivers and have become a fall favorite that pairs well when baked with seasonal root vegetables and mushrooms. It may not be fall weather outside yet here in Georgia, but we sure do like those fall flavors!
Mercato Ending
We will be ending our partnership with Mercato delivery service next month. I hope you are not too disappointed but please know that we can still do curb-side pick-up and you can always call ahead to reserve your order!

And Finally
I have been reading a book called Undaunted Courage about Meriweather Lewis and his journey with his buddy, Clark, across the country. It really is a spellbinding story about the trials they endured as they made their way along the Missouri in search of an "all-water route across the continent." As you probaby know, they suffered through extreme temperatures, communication issues with the natives, lack of food, and lack of clothes and shoes. They climbed huge mountains and rafted raging currents on the Missouri River. At one point, Lewis gets his first view of the Rockies and leaps for joy and then immediately starts to think of how difficult it will be to cross them in pursuit of the Pacific Ocean.

Here's what he wrote in his journal (with his spelling!)

"when I reflected on the difficulties which this snowey barrier would most probably throw in my way to the Pacific, and the sufferings and hardships of myself and party in them, it in some measure counterballanced the joy I had felt in the first moments in which I gazed on them."

But here's the best part:

"As I have always held it a crime to anticipate evils I will believe it a good comfortable road untill I am conpelled to beleive differently."

Could you ever find a better outlook on life than that? Believe it well be a good comfortable road until you are forced to think otherwise -- a message worth repeating to yourself every time you start to dread the future.

Back to School, Grey Sole, and Catch to Go

 

Hey Y'all,

Back to school used to mean leaving behind outdoor cooking and starting to plan Fall meals. These days, back to school is right smack in the middle of summer! And that's a good thing because there are still so many great fish coming your way for fast, healthy and easy week night meals.

This week we have grey sole for our special which is a great kid-friendly fish. It's mild and thin enough to stuff. Have you tried picking up one of our crab cakes to roll up inside the sole fillets? Stuffed sole to warm your soul. Roll into pin wheels or place one fillet on top of another with the crab meat in between. It's heavenly. Heavenly soul.

Here's another idea to switch up your fish dinners. Pick up a container of our mustard sauce. Yep, I said mustard sauce. If you don't use all the crab cakes to stuff your sole, you can stuff your mouth with them slathered in mustard sauce. Salmon and mustard sauce? YES!! Any kind of fish with mustard sauce, YES!!! One day I had some sauce that was going out of date that day and I gave it to a customer and asked her to give it a try. She's been back weekly for it because she discovered it goes on chicken and pork as well. Trust me. It's delicious.

Can I bore you a minute? It's that time of year again when I stop bragging on my fish and remind you about the remarkable blessings in my life.

Back in 2013 I had been open for two years at Johns Creek and one day I had a little company for my walk home from work. Here's Dakota, Reilly and Joel from way back then.
That was yesterday. Today, they are getting haircuts and new clothes and school supplies to start 11th, 5th and 3rd grades. Where has time gone?
But wait! There are two more!! Kailey is starting 11th grade and Keira is starting to walk.
They mean the world to me.

Star Power, National Oyster Day, and Saturday Special

 

Hey Y'all,

My apologies if you got turned away from our Brookhaven location Thursday morning. We sent out a note to the Brookhaven customers on Wednesday advising them that we were delaying opening until noon on Thursday because we were allowing a company to use our store to film a pilot for a reality TV series. It was supposed to last from 9 to 12 but it went on (and on and on...) I did my best to sneak customers in and out when the cameras were off but it was weird and not our usual service. As is ALWAYS the case with our awesome Brookhaven customers, they took it in stride. I suppose living inside 285 means Hollywood in a fish store is pretty normal??

My understanding was that the production company was borrowing our store and basically we should have as few people around as possible due to their COVID restrictions. That sounds pretty easy, right? Just show up and get the store set for business by 9:00 am and then sit back and watch the magic happen. NOT. Mia and I had no idea that we were actually IN the scene, working the store and waiting on the actors/customers. With no advance notice we were suddenly on camera trying to pretend that we do this sort of thing every day.
Catch Customers Can Cook!
Here's what Jalpa served her family this week. Not only is she one of our absolute favorite customer/friends, as you can see she is an amazing cook. She made th is wild salmon with beets, spinach pastry, and chopped almonds.
Did You Know?: Steelhead Trout vs. Salmon
We had a poll on Tuesday on our social media pages asking if you could tell the difference between steelhead trout or salmon. Did you take our poll? If you did, the first picture is salmon and the second is steelhead. It was about 50/50 in your answers! Did you guess correctly? Did you know that steelhead trout and salmon are both excellent sources of omega-3 fatty acids? Salmon contains less total cholesterol but more total fat when compared to a steelhead trout. If you’ve eaten both, which do you prefer? There are subtle differences in the flavor of the two fish, but if you do not eat them often, it may be difficult to tell the difference. If you want to have a fun taste testing at home, grab some of both next time you’re in our store and see if you can get your friends and family to taste the difference!

National Oyster Day - August 5th
Apparently we can only talk about oysters but maybe it's because National Oyster Day is coming! Like wines, oysters have a variety of flavor profiles. The flavor of oysters can be categorized mainly by a few flavor characteristics: briny, buttery, sweet, metallic, and mild. Experts can break down these flavors even further, picking out flavors like melon, cucumber, mushroom, and more. In addition to the varied natural flavor profiles, there are also many ways to prepare oysters - you can eat them raw, grilled, fried - the list goes on.

At Brezza Cucina (an Atlanta restaurant sadly now closed due to COVID) , chef Andrew Cacioppo tosses oysters in Calabrian chili oil, smokes them over white oak and then marinates them in olive oil, orange zest, balsamic, shallot and oregano. This is served with butter-toasted sourdough on the side. You could easily make your own variation of this recipe at home! Are you going to be celebrating National Oyster Day on Thursday?
THIS SATURDAY ONLY - Miso Marinated Sable (Black Cod)
A few months ago we posted this recipe . Since it had such great feedback, we decided to go ahead and do something special for you this Saturday (07/31) only - an already miso-marinated sable (black cod) for only $19.99 each! We know that this is an amazing recipe that you'll enjoy so we did the hard part for you. The recipe recommends marinating 2-3 days in advance. I don't know about you but I can't plan dinner 3 days out because you never know when a movie producer looking for a fishmonger will come calling. We decided to do the marinating for you so that you can decide Saturday morning if you want to enjoy this feast that night.

This is while supplies last and since it is an experiment, we're only making 10 per store. We cannot do pre-order or call ahead orders on this since it's a limited item. Get in early! Limit two per customer. If it is a success you might see it coming more often to our stores.

And Finally
Here is some advice I wish I had read Thursday.

Just because you don't have any Hollywood engagements on the calendar for today doesn't mean there isn't a chance of glamour shots ahead. Do your best to start out respectably. Just because you stink at the end of your fish-selling day doesn't mean you should start out wearing the shorts that got fish guts smeared on them yesterday. Start out smelling great!! Even if you will probably wear your hat all day, drag that comb across your hair where it stuck to your face when you drooled in your sleep. Make up is not required but very seriously suggested for some of us and plenty of coffee is a plus. It will bring a light to your eyes that just might twinkle on camera if you land an impromtu gig during the day.

You never know what's coming so every day you should tend to that inner celebrity that exists in all of us - even this smelly fishmonger.
