Rainbow Trout - the Slimier, the Better!
Have you noticed that the rainbow trout in our cases appears slimy or slippery? That's a good thing! Rainbow trout secrete a mucus that protects them from infection and abrasion when they go up over rocks and sticks in rivers. We don't wash that goo off before selling it because it is a sign of freshness, but you can wash if off before cooking it. Don't let the slime fool you - we only sell you the prettiest, freshest fish out of our cases!

Smaller than our typical dry sea scallops, they are still just as versatile for soups, salads, and are chem-free! Feeling All the Love
We are so happy with all the feedback we received from the Valentine's Day meals this year. If you ordered one, hopefully you had the same experience as these customers who wrote in:

BettyAnn A.: Of all the five star meals I have had in my many many decades of life, my husband and I agree hands down yours was the best. It was so relaxing to enjoy a delicious quiet meal by candlelight in the privacy of our own home. We ate slowly the generous salad and appetizer while the main entry cooked. We took our time enjoying every savory bite of the stuffed salmon and delicious veggies. We barely had room for dessert but ate it anyhow. Species Spotlight: Wild Striped Bass
In the confusing world of fish names, wild striped bass is also known as rockfish and striper. The fish we are featuring this week is from the Atlantic and is one of our all-time favorites. It has a beautiful creamy white meat that is mild and flavorful at the same time.

Our portions come with the skin on so that you can cook them on your grill with no trouble. It's going to be a pretty nice weekend (almost spring-like) so we've included a few grilling recipes here like:

Species Spotlight, Valentine's Day Teaser, and Snow Party Supplies

Someone recommended this market, and we were NOT disappointed!!! Fast, courteous service of fresh seafood, which was well prepared. We were really impressed by the manager of this location, Mr. LeVar. He has a real nice Southern hospitality vibe and went out of his way to make sure we had quality selections and service. We have recommended family members to this market. They are highly satisfied - also thanks LeVar for being so helpful.

Snow Supplies - Wine & Fish
It's supposed to snow on Sunday! We all know Georgia weather is unpredictable and you definitely don't want to be caught sans fish and sans wine. Get prepared with fresh fish to cook and libations to enjoy when you may be stuck in the house. In the interest of public service, we are resuming our wine tasting at Brookhaven from 3-5 pm on Saturday afternoon to help you choose some cold weather defense mechanisms. Saturday will a busy day at all locations in spite of the fact that we don't sell milk, bread or toilet paper (we can offer you some tp of our own if you are desperate). Come in and get everything else you will need for an at-home snow party! Keep an eye on Facebook or Instagram on Sunday in case inclement weather does keep us from opening. We'll sent out a social media blast to keep you updated.

Milton Market Wine Update
Speaking of libations, if you're a regular Milton market customer, you may have noticed that Milton Wine & Crystal is no longer in our store as of 2022. Yale and Susan have decided to step back and focus solely on their store, Johns Creek Wine & Crystal. We will miss them!

"But where will I get my wine to go with my fish selections!?" Don't worry - there are some new and exciting wine options coming to the store soon! We're in the middle of remodeling our wine section so stay tuned for updates over the next month or so.

Valentine's Day Teaser
We know it's still a month away but wanted to let everyone know that we are doing our ever-popular Valentine's Day meals again this year! If you are new to the Catch, you might not have heard of fabulous meal selections for Valentine's Day. It's a dinner for two complete with appetizer, entrée, and dessert options for you to choose from. A perfect meal for you and your special someone to cook at home together! It's a big deal this year when you might not be feeling good about dinner at a restaurant. We are currently finalizing our meal options and will announce our meals and how to place your orders soon!
Customer Recipe & Seafood Sunday Highlights
Last week we mentioned Oysters Rockefeller and a customer gave us a great one that you can do in the air fryer! Lou H. says all you need to do is pour melted butter on top of oysters, top with parmesan cheese and chopped green onions or parsley. If you want to get super fancy, add some crumbled bacon. Place them in the air fryer at 375º and cook for about 7 minutes. So easy!

We also received some great entries last week for our #seafoodsunday from social media (pictured below). Don't forget to send in your recipe pictures and tag us on social media. We love seeing how creative you great chefs are with our amazing seafood!

Species Spotlight: Branzino
Branzino has many names, from Capemouth and Sea Perch to Loup de Mer and "King of the Mullets," though most of the time it's called Branzino or European Sea Bass. Outside its native Mediterranean Sea, branzino can be found in the Eastern Atlantic Ocean from Norway to Senegal, as well as the Black Sea. Since it's a migratory species, branzino travel south for the winter into warmer waters. This night-hunting fish grows up to three pounds, though most of the branzino you'll see on the plate is closer to one or two pounds — making it a perfect dish for two. It's a mild white fish, popular in Italian cuisine, and usually roasted whole, with a tender and delicate flesh. The mildness helps impart the ingredients you mix with it, whether it's Southeast Asian ingredients like lemongrass and chilis, or a classic Mediterranean preparation with fennel and tomatoes. However you plan to cook it, do enjoy the skin – it crisps up nicely and helps the fillets hold together.

New Year, Healthy Recipes, and Oysters Rockefeller

Healthy Recipes for the New Year
Is one of your goals to eat healthier this year? Did you indulge too much over the holidays? If you're ready to get your health back on track, start with seafood! Studies show that eating fatty fish twice a week reduces the risk of dying of heart disease by 36%. 36%!!! And seafood provides other benefits as well such as vitamin D, selenium, and high levels of protein.

Two of the reasons for generally low seafood consumption in the US are 1. limited access to quality seafood and 2. uncertainty about how to cook seafood. If you are reading this you must have some appreciation for your access to the best seafood in the area. And if not - well hi, hellooooo!! We are right here in your neighborhood selling nothing but the very best products available.

If you live nearby and are able, stop in and pick up your seafood twice or more a week. If it is out of the way for you, come by once and pick up two meals. Our fish is never frozen so it won't hurt to put a piece in the freezer for a few days.

As far as uncertainty about how to cook it, just ask us! We know! We've put a ton of new recipes on the website here to help stir up some inspiration like these pictured below:
National Oysters Rockefeller Day
It's January 10th! What a fun day to celebrate and it gives you something to look forward to on a boring ol' Monday.

Oysters Rockefeller was created in 1889 at the New Orleans restaurant Anotine's by Jules Alciatore, son of founder Anotine Alciatore. Jules developed the dish due to a shortage of escargot, substituting the locally available oysters and the recipe remains unchanged, with an estimated three and a half million orders having been served!

The dish was named after John D. Rockefeller, the then-wealthiest American, for its extreme richness. It consists of oysters on the half-shell topped with a green sauce and bread crumbs, then baked or broiled. Though the original sauce recipe is a secret, it includes a purée of a number of green vegetables that may include spinach.

Similar versions of the dish have proliferated in New Orleans, with none noted as an accurate duplicate. Chef Alton Brown states in the "Shell Game" episode of his Food Network series Good Eats that Alciatore took his recipe to the grave and any version since is merely an assumption.

While it may not be the original recipe, here's one of ours! To make it even easier, we finally have our frozen half shell oysters back in stock - each tray comes with a dozen shucked oysters. They are great for baking and grilling.

New Year's Eve Hours, Recipes, and Hangover Cures

Just a reminder that we close tomorrow, New Year's Eve, at 3pm and we're closed Saturday, New Year's Day. We'll resume our regular hours on Sunday, January 2nd. It's going to be a busy Thursday and Friday so hurry in as fast as you can - just be safe in all the rain!

Seafood in the New Year
Across the globe, many cultures enjoy seafood on New Year's Eve and New Year's Day. It's believed that eating seafood on the first day of the year will bring a year of luck, prosperity, and good health. In China, fish are believed to be lucky because their scales resemble coins, and they swim in schools which invoke the idea of abundance. Here are a few recipes that you could try either New Year's Eve or for a New Year's Day brunch:

Hangover Cure
It is a little-known fact that New Year's Eve hangovers can be instantly cured by a breakfast of smoked salmon. Yes! It's true! The delicious flavor of our smoked salmon is guaranteed to make you forget your headache! Choose from our hickory roasted salmon or our cold smoked salmon. Both pair well with our mustard sauce, too.

Holiday Ordering, Clams, and Happy Holidays

 

Hey Y'all,

I hope you are doing well and not stressing too much about the holiday next week. I've spoken with many of you over the last few days who are confused about how we are doing the Christmas ordering this year, so let me clear this up for you. All of your orders for Christmas need to come to us today and the orders you place have to be picked up by this Sunday. It's not the same as years past and that's because, well, nothing is the same as years past. We just don't have the staff to take the orders and pack the orders and organize the pickups.

I promise to do my best to keep all the Christmas hits well stocked in our cases. Hopefully my best will be good enough.

Good news! We are now open 7 days a week again so you can come see us on Tuesdays.
Species Spotlight: Clams

Clams are a big deal at Christmas so just in case you were interested, here's a bit about the kinds of clams you could pick up here at Kathleen's Catch next week (while supplies last). These are all hard-shell clams - soft shell clams are available sometimes but we won't be bringing them in next week. For better or for worse, southerners are generally not soft-shell clam fans.

Littlenecks (named after Littleneck Bay at Long Island, NY) are the smallest commonly available size of east coast hard shell clam with 10-13 per lb. and a 1” hinge. Littlenecks are the best choice for eating on the half-shell (raw) because they are tender, sweet and are also great steamed, roasted or over pasta. We sell bazillions of these.

Middle necks are the next size up with 7-9 per lb. and a 1-1/4” hinge.

Top necks are next at 5-7 per lb. and 1-1/2” hinge They are the perfect size for Clams Casino. We should have a good amount of these next week.

Cherrystone clams are named after Cherrystone Creek on Virginia’s eastern shore. They’re a little larger than littlenecks with 3-4 per lb. and a 2” hinge and can be eaten raw, roasted, steamed, in chowder, or stuffed. These are not readily available this year in large quantities - I'll do my best to get some.

Chowder clams are the largest size. The meat is tough, but they make flavorful chowder (like this recipe here). They are usually chopped, minced, or diced for use in clam cakes. We won't be getting these next week so this paragraph was just a tease...

And Finally
It's a really amazing and awesome and wonderful and fabulous time of the year... for most of us. For the rest, it's a tough time. You know who you are. If you are faking it this year, let me just say that I appreciate you.

I have so much to be grateful for - all the usual stuff, family, business, health. Yep. I have it all. I don't need to spell it all out for you here to make you ponder the things that aren't going your way. What I can say is that there are, in fact, reasons for EVERYONE regardless of personal situations, to celebrate. Those reasons don't have anything to do with wealth or health or family. They have to do with the existence of solid, pure goodness in the world. Goodness is the reason to rejoice.

Please be kind, patient and appreciative of your blessings this coming week. Thank the cashier at the grocery store just for being at work and be gracious when your best laid plans don't turn out perfectly. Go with the flow this year. In fact, that sounds like a good New Years resolution too! Go with the flow!
