Rainbow Trout - the Slimier, the Better!
Have you noticed that the rainbow trout in our cases appears slimy or slippery? That's a good thing! Rainbow trout secrete a mucus that protects them from infection and abrasion when they go up over rocks and sticks in rivers. We don't wash that goo off before selling it because it is a sign of freshness, but you can wash if off before cooking it. Don't let the slime fool you - we only sell you the prettiest, freshest fish out of our cases!

From the bay in Baja, Mexico, these scallops have a sweet taste with a hint of the sea and a firm, velvety texture. Smaller than our typical dry sea scallops, they are still just as versatile for soups, salads, and are chem-free!
